Summer 2018 nasties

Aunty May Even being of an agnostic/atheist belief, there is something that being in a church for certain occasions feels a bit different. Recently (as of August 2018) my Aunty May passed away. Cancer had the final word. She had been living with the disease for too long, keeping up amazing spirits. Of course, it is sad. Trying to dig any positives out of any death is a damn hard ask. That the suffering ended? Possibly; hard to say an outright yes. That she received a brilliant send-off in church? Again, there is that word possibly. She was one of my Mam’s sisters. There were three. Aunty Maureen (she was funny!) was taken away surprisingly in the summer. There is now only one sister to Mam. Aunty Ann. One Scottish Aunty for Sharon (my sister) and I. To the church, and as I’ve said I’m largely a non-believer type (judge if you want) and as such attending church is a rare occasion. There are two reasons for such visits; for me. One sad, one happy. ...

Used to hate… Brussel Sprouts!

Roger goes vegetarian...for a day Used to hate… Brussel Sprouts! That is right. Brussel sprouts. Kid you not. Another ‘easy’ “5 ingredient” effort from Jamie ; from me. “Why?” I hear you shout. Well, I have made a sprout recipe before – as the main ingredient, not a Christmas addition – all be it 10(ish) years ago and it was a nice surprise. A stir fry that worked. So, this healthy meat-free option sounded worth a go. The little cabbage-like green oddities that are generally un-liked, especially by children I think. Going back a decade or 3 I remember not liking anyway, nor my sister! The overcooking? Very possibly (sorry Mam!), ignoring the forget-me-not forgotten pan full of sprouts that cooked, and cooked, and cooked… Sprout-mash?! Wasn’t the best advert for the little fellas! Accidents happen! Singapore noodles Another ‘blog meal’, somewhat different bringing in a taste of the far east, with Singapore noodles! Ideal for a 'less hassle' and quicker feed. Come on, who doesn’t like the Chinese menu? Well, as we mostly know it via take-away! As a self-confessed foodie I search for and eat whatever; E.g. (thinking South East Asia)  Thai , Vietnamese , Korean . So, this just looked to tick boxes for a night to conserve some energy and 'deliver' a tasty filling. “Fast, healthy food at its best.” Sold. Cheesy Chorizo Chicken and Spinach

Cheesy Chorizo Chicken and Spinach I made it! A savoury start (continuation after the sweet Tiffin ) on this Food blogging journey of mine. As I mentioned that I would use LEAN IN 15 as my recipe source, from book one (the red one), the first meal is Cheesy Chorizo Chicken and Spinach. So be it then! First change I opted for was to use turkey mince not chicken. Just for a change. Yes, chicken is chicken as we know I just fancied something a bit different after having had a fairly poultry week previously. I do not have a great deal of dairy. Is it a miss? A bit I suppose. Cheese however is cheese! Now and again it fits with a lot. So, when I saw the Mozzarella ball for this recipe I saw no problems there, far from! Another   easy recipe then to follow, and it was in truth. Biggest challenge? Finely dicing chorizo! It’s quite tough, so that extra element of care had to be taken. It is chorizo – not fingers – especially as yes, it’s a “Serves 1” meal, but. ...

Day of the Tiffin!

Day of the Tiffin! For my first ‘main meal’ blog is a tad sweeter than any main ever; I’d expect. The ‘easy recipe’ for a Tiffin ( bastardised* into a cake!) was put to me as a starter on my/this blogging journey. I wilfully accepted. I do believe I have, and follow a health(ish) diet even though I thoroughly love food in all of its forms and types, that does include the odd bit of sweet over-indulgence now and again. So, I simply had to investigate this Tiffin thing! Oh. My. Word. It looks fabulous and equally fabulously wrong when the ingredients are considered. However, the list I first saw is for a cake for 12. Phew. That was a relief. Or so I thought! I mentioned the constructive word “easy” and on paper that is exactly what it is, or at least should be.
